Pulped natural means the skin comes off the cherry but some of the sticky fruit stays on the bean while it dries. The result is rounder than a washed coffee and calmer than a natural.
We roast it a little darker than the others, and we drop it before the surface turns oily. That keeps the hazelnut and the thin line of orange peel at the end, which most dark roasts burn away.
Moka pot on a low flame, taken off the heat when the first sputter arrives. Espresso: 18 g in, 36 g out, 30 seconds.
