Cherries from smallholders around Shakiso, delivered to one washing station and dried on raised beds for about three weeks. It is the coffee we hand to people who say they do not like coffee.

The cherries are sorted twice, once at delivery and once on the beds, where they are turned several times a day so that nothing ferments in the middle of the layer. What reaches us is clean for a natural: fruit first, then a florals-and-tea finish that does not turn sour as the cup cools.
We roast it light but not timid. First crack arrives around 9 minutes, and we let it develop for just over two minutes afterwards. Shorter than that and it tastes of grass; longer and the jasmine disappears.
Filter, 1:16, water at 94 °C. A V60 in about 3 minutes 15 seconds works well. In an AeroPress, try a 2-minute steep with a gentle press.
